I use a program called "VoiceAttack", which interprets my speech and responds with pre-programmed responses, or key presses, or whatever I tell it do. For that program, I spent some time training it to recognize my voice, as heard through my microphone. I would speak a command, and the program would type what it thought I said. It memorizes sound patterns, and you define what that pattern represents. You could use Klingon if you wished, and it would still work. You store the commands in profiles, which correspond to whatever program you're using it on. I can say "check my email", and VA will open my browser and my email program for me. For flying I can set flaps, start the engines, turn on lights, gear up/down, etc.
The VoxATC program sounds like a cousin of VA. All I mean by that is that there is
most likely a "training period" to teach your speech engine your voice/accent. I didn't see any complaints about the program usage.
There is a 30 day free trial offered by VoxATC, so you could "check it out" before spending your money. VoiceAttack also has a "try before you buy" option of full functionality but only 20 commands max.
