I got a new Saitec Pro HOTAS .... I could not control any aircraft because the stick was WAY TOO Touchy! Any slight movement and I got an extreme reaction. After a lot of playing, the key is the Extremely Dead Zone that flattens the curve so that when you move the stick, you get a more gradual result.
Here are the sensitivity settings that work for up/down, left/right for my setup.

Update: 10.29.23 - Latest curves below. Also discovered disk below the spring on the stick, I twisted it counter clockwise to "loosen" it and the joystick works much better, it was "sticking".
