OK, DL'ded the Bounty, the update and the added camera views. Haven't tried it yet. My next question is do I need to install the AP and make the config changes for reverse thrust as discussed in "Pilotable Boats" and "Working on the Boats" in order to make this work properly?

(I assume AP is for autopilot.) No, no, no!!! This is a masted sailing ship, and is powered by the force of the wind, only! (I did try using the AP on it, just for course heading.)
Autopilot on the HMS Bounty DOES NOT WORK!!! Don't do it.
That being said, I did try some different wakes and bow spray effects on it. Still looking for a good bow spray.
Customize your sim's weather to make the wind speed and direction in the direction you wish to go. I use 24 knot winds for full sails and top speed. Set the cloud cover, precip., and time of day settings. Then jump on deck and weigh anchor. You must have some forward momentum to activate the "auto-skipper". He handles the sail management. You can also do the sails yourself, if you'd like. To use the "tugboat" function, the sails must be stowed and anchor weighed. I used the "pitch down" of my flight yoke (or the up-arrow key) to move the ship forward by tug at 4 knots. Don't plan to travel anywhere using the tug. Four knots is excruciatingly slow. It is only for getting out of trouble, . . . or into port. (which might get you back into trouble.)
